Although the patch goes live December 14th, the Yule Festival won't start until December 16th, two days later. We don't know the official time but, as the game files will be installed in advance, it could happen at any time.

The update releases at 12 pm GMT / 7 am EDT so the Assassin's Creed Valhalla Yule Festival should release at the same time. You have until January 6th to take part in all the festivities.
